The best wahoo bite is almost always in the early morning and lasts until the sun brightens the upper part of the water column. Generally, this early morning bite means that you need to leave the night before in order to be at the wahoo grounds in time.
Since so many offshore enthusiasts know about the most obvious wahoo spots, like the West Flower Garden Bank, the crowds of boats can be a problem. To avoid those crowds experienced captains capitalize on other more distant and less well known spots.
Wahoo are extremely fast moving and aggressive predators that strike hard and fast with razor sharp teeth and when subdued provide great table fare. The razor sharp teeth mean that all baits need to be rigged with wire or cable to survive the initial hit and the ensuing fight. Texas wahoo are commonly 30 to 120 lbs, with any fish of 60 or more lbs to be displayed with pride.

Popular baits include large deep running hard plastic baits, islander-ballyhoo combos and skt. The use of deep running baits and downriggers are not uncommon. These help to get deeper in the water column where the wahoo flee as the sun rises higher. Double and triple hook ups happen regularly.
Wahoo fishing is primarily a matter of trolling at slightly less than marlin speeds while pulling 2 to 5 baits at 3 to 6 wakes back. We like to use 30 lb class rods and reels and high visibility line in the 60 lb range. The fight is hard with wahoo. Not as hard as a yellowfin tuna or a blue marlin but tougher than a king mackerel or equal size.
Extreme caution should be exercised when gaffing and boating gaffed wahoo. Their teeth are quite literally razor sharp and upper and lower jaws form scissors. Merely touching any human skin to the razor sharp teeth of a live or dead wahoo will result in nasty and serious cut. Gaffed fish are extremely dangerous on the floor of a cockpit. The best practice is to club them before or immediately after bringing them on board.
